The Batch That Started It.

The idea began inside the New Orleans beignet business, where we kept seeing home beignet mixes come out flat, more pancake than puff.

We wanted the kind of lift, crisp edge, and soft center that makes the whole kitchen stop for a minute. Rather than settle, we started testing.

We Chased the Puff.

Working with local food scientists, we tested, adjusted, and kept going until our beignet mix delivered the lift, crisp edge, and soft middle we wanted in every batch.
